【Introduction of this dram】
The “Native Birds Trilogy” is a collaboration between Friends of Irish Whiskey and Two Stacks, and Release No.1 is now available.
Although no distillery is indicated on the front label, the side clearly shows the mark of “Distilled & Matured Bushmills Distillery”. This is a whiskey from Bushmills, which has been matured in first-fill bourbon barrels for 21 years, giving it a bright, smooth passion fruit aroma that many are familiar with as the Bushmills style.
Nose: Smooth and sweet citrus, apple, pineapple, a hint of melon sweetness, dried fruit, malt, nuts, honey, herbal vanilla, wood, cardamom, and spices.
Palate: Rounded mouthfeel. Citrus, plum, a touch of passion fruit, malt, honey syrup, wood, cardamom, herbs, and spices.
Finish: Medium to long. Citrus, passion fruit, malt, nuts, wood, herbs, and pepper, with a soft fruity sweet aftertaste.
【Introduction of Brand】
Two Stacks 由 Shane McCarthy、Liam Brogan 和 Donal McLynn 三人於 2020年創立，品牌名字發想來自於 Old Dundalk 蒸餾廠（1708~1926年），這間酒廠曾擁有愛爾蘭最大的兩個煙囪，被航海員用來在北極星的指引下航行到愛爾蘭海岸。因此取名這個名字及標誌設計是對愛爾蘭威士忌的遺產及歷史致敬，正如他們正要在愛爾蘭威士忌新篇章中引領新一代一樣。
他們與當地幾家威士忌酒廠配合，當跟這些酒廠買酒的時候，大多不使用酒廠原本配方或像其他品牌直接買新酒，相反地會要求酒廠使用 Two Stacks 想要的配方去製作，這是與其他品牌最大不同之處。
另一特點是他們在熟成用的桶子的挑選和運用。他們從全球各地選購各式酒桶，從紅冰酒桶到水果白蘭地桶，找尋風味豐富甜美的桶型來配合想要與其搭配的新酒。此外，還使用大量的蘭姆酒和美國波本威士忌與不同區域的歐洲橡木桶在倉庫進行陳年，是愛爾蘭少數真正擁有自家熟成倉庫和調酒師的品牌。
