|Distillery introduction
Killowen distillery is Ireland’s new star. Located within the Mourne mountains, combined with the traditional way of making spirit as well as excellent natural resources, its ambition is to make world class craft spirits. Founded by Brendan Carty, the distillery is made of recycled materials and is making spirits the traditional way and by hand.
|Distilery process
The distillery employs wild fermentation and uses direct fire to distill, in turn creating new flavours and aromas from the Maillard reaction. The distillate’s head, heart and tail are determined on the day by the distiller’s nose, this is how it was done back in the days for Irish whiskey.
|Poitin series
Traditional Irish liquor Poitin, made by Killowen distillery, uses local grains as its key ingredient and is only allowed to age in a cask for a maximum of ten weeks. The Pangur series has Poitin aged in bourbon, stout and PX sherry casks, suitable for drinking it neat and for cocktails.
|Barantuil series
The series that the distillery is most proud of, single potstill whiskey made by different types of grains, not diluted by water and aged 3-4 years. This series usually is sold out immediately in Ireland and won two gold medals in the Icons of Whiskey Ireland 2024.
|Gin series
Killowen specifically chooses ingredients that are appropriate to the season. Plenty of ingredients can actually be found locally in the distillery’s surrounding areas. They believe this can reflect what’s special about the local area and gives the Killowen gin a unique aroma and taste. The distillery proudly says, “our gin isn’t just gin, it’s a piece of artwork, it‘s a representation of Ireland’s culture, history and nature.”
