Ailsa Bay is a malt whisky distillery located near the Girvan grain whisky distillery, established in 2007. It was created to supply the blended whisky market. By adjusting the peat intensity, fermentation time (between 60 and 72 hours), and using stainless steel instead of traditional copper condensers, it produces new make spirit with more sulfur notes. It can produce four types of spirit.
The label features a granite spoon, suggesting that this cask is an Ailsa Bay Teaspooned Cask rather than a blended malt whisky.

Nose: smooth raisins, dried fruits, blackcurrants, toffee, dark chocolate, walnuts, cinnamon, nutmeg, and spices.
Palate: rounded mouthfeel. Raisins, dried fruits, a hint of sweet and salty candied fruits, figs, dark chocolate, roasted nuts, malt, nutmeg, and spices.
Finish: Medium to long. Grape skins, berries, citrus, plums, toffee, dark chocolate, coffee, nuts, cinnamon, and spices.
